What I Ate Wednesday - Veggie-fied

Who am I kidding? It's always a veggie-fied party over here :)

Happy What I Ate Wednesday! There's been a lot of talk about love and V-Day and spoiling your sweetie, but I think it's important that we also remember how important it is to love ourselves. One thing we can do to show our bods a little love and respect is to eat lots and lots of fresh  fruits and veggies.  I try to fuel myself with lots of fresh and delicious produce, so this month's "Love Your Veggies" theme has been pretty darn easy to follow!

Breakfast
 
I've been staying true to my green smoothie ritual every morning. I make a batch that lasts for 2 days and store it in the fridge in a mason jar. This beauty contains baby spinach, celery, apple, pear, banana and lemon. 
 
It's as good as it is green ;-) 
 




 
Lunch
 
I`ve been craving fresh salads alot lately, so that`s what I often pack for lunch at work. Baby spinach, olives, grape tomatoes, mushrooms, and a crumbled quinoa veggie patty was on the menu Monday. I top the salad with an olive oil and balsamic mix - and of course you`ve gotta add some dijon! This was amazingly delish!
 




 
Snackage
 
Snacks are a must in the afternoon. Most of the time I reach for an apple or a banana and we`ve also been loving pineapple lately - only $2 for a peeled and cored beaut! 
 



 
I also had a mini raspberry cheesecake before I gave the rest away.
Hmmm....it looks like someone else really wanted a bite of that cheesecake!!!

And I also had to taste test my fresh baked banana bread before I posted the recipe yesterday! Add a wee bit of organic butter and you have a swoon-worthy snack. It`s so good that I ate it up before I could even get a pic! 
 
 
Dinner
 
I`m still eating alot of lonely girl dinners - veggie scrambles (1 egg and a splash of almond milk scrambled up with some sundried tomatoes, mushrooms, goat cheese, baby spinach and green onions) and roasted butternut squash can often be found on the menu. 
 
I know you`ve seen this type of meal before, but I absolutely love it and the fact that it`s quick and easy makes it perfect for those nights when I`m cooking for one.
 



 
I think I`ve packed as much veggies as I can into one day of meals wouldn`t you agree :-)

What I Ate (My Faves) Wednesday

By now I'm sure I don't even need to tell you what day it is because What I Ate Wednesdays are starting to become quite a tradition here on Vegvacious! I love Wednesdays because I get to share my eats, but mostly I love being inspired by all my fellow bloggers. There are so many meal ideas I never would have created on my own! Make sure you check out the WIAW page on Jenn's site, Peas & Crayons to get lots of mealtime inspiration!





Instead of recapping a day of meals this week, I decided I would show you my fave eats from last week.

First up, check out my breakie.

Banana Split Overnight Oats

Why the pink boa you might be wondering?
Well I got the boa at a bridal shower this weekend and it just seemed to fit.
Cute pink bowl + amazing oats = breakfast fit for a special kinda gal :-)

Normally I don't love cold oats, but this combo is awesome. It was so good that I had to fight the urge to lick the bowl clean ~ seriously, I think the heat's going to my head!!  

They are super simple to make too! Add together 1/2 c oats, 1 1/4 c. almond milk, 1 1/2 tbsp chia seeds, 1 tsp vanilla, 1 tbsp cocoa powder, a mashed banana and 1/4 c. diced fresh strawberries. Mix until well combined and refrigerate overnight. In the morning, you just pull them out of the fridge and chow down! I topped mine with a blob of White Chocolate Wonderful peanut butter and some homemade strawberry jam. Yummy!!!!

For lunch, I have been loving Kris's Warm Artichoke Bean Salad ~ soooo tasty!!!!


She served hers with rice, but I didn't add anything to mine. The lemony freshness of this salad tastes like sunshine!

For dinner, it was all about the cleaning out the fridge.

We are going away for the upcoming long weekend, so I wanted to use up all the veggies that were in the fridge. Leanne's recipe for an Everything Awesome Frittata inspired me. Keep an eye out for my recipe, but in the meantime check out hers. It was delicious and filling and only 193 calories!!

And of course we can't forget my fave snacks. I've been eating blueberries out the wahzoo. Keep an eye out for me in the upcoming Smurfs movie because there's a very good chance I might fit right in :-)!!!


My grandma went blueberry picking and sent home a 3lb container yesterday. Um....it's already half gone and Derek's doesn't like blueberries so I think you can tell who the guilty culprit is!

My other fave snack has been graham crackers smeared with a little sunflower seed butter and homemade strawberry jam. SO. GOOD. If you have a craving for some sweets, this will totally satisfy.


So there you have it. My eats were superb this week and I hope you're inspired to make something delicious! With all the fresh produce popping up how can you not?! There's just so much good food out there waiting for you!!

Home Alone ~ My Supplies

So Derek has been gone since 7:30 a.m. and he's all set up at the Michigan International Speedway lounging in a lawn chair and sippin' a cold one, or two :-)

Me, I'm finally home from the longest work week EVER and I'm getting myself ready for a lazy and relaxing weekend. On my way home I stopped for some essential supplies:

Veggie Pizza (see, I wasn't joking about this in my last WIAW post!)

Red Wine
This is a new Merlot from Niagara, Canada and it is FANTASTIC.

Dark Chocolate - obviously!

Fresh, local strawberries - to curb my sweet tooth after I polish off that chocolate.... or maybe I could melt the chocolate and dip my berries in it...hmmmmm......

Season 1 of Dexter - I've had so many friends tell me I will love this series. Erin also mentioned she was lovin' it on her blog recently and it's been on my mind ever since, so I decided to break down and rent it. I found it at our local library, so it was a FREE rental! Yeah baby!
Don't judge if I watch the entire season by Sunday night :-D

Stuffed Frozen Kongs - a definite necessity to keep the doggies stimulated when you plan to watch 10 hours of the tube over the weekend! These ones are stuffed with sweet potato mashed with just a wee bit of cream cheese and finely diced chicken weiner.

...oh, and I can't forget about the kale :-D ....wha??? You'll just have to check back to see what I have planned for it! I have a couple of yummy and healthy recipes on the brain.

What is your all-time favourite TV series? Hands down, mine is Sex & the City!
