Peanut Butter Banana Soft Serve

TGIF!!! I thought this week would never end! My friends and I have plans to engage in a little retail therapy at the Birch Run Premium Outlets in Michigan tomorrow and I'm super excited to go. Of course, that means this work week has dragged on and on and on.....

But Friday has finally arrived my friends and to celebrate I'm sharing a delightful and delicious treat that I created last night! I really wanted wine (when don't I ~ hehe!!), but I opted for a little something sweet in celebration of having two sunny days in a row ~ can we all give a WOO HOO?!?!?!!

This treat is so incredibly easy and it tastes really, really decadent. Especially when you add your own fabulous toppings :-).

Peanut Butter Banana Soft Serve
Serves 1
Two ingredients is all it takes to make this awesome treat! It's cool and refreshing and tastes absolutely sinful, but there is absolutely no sugar or dairy. Just bananas and all natural peanut butter. Of course, you can customize this tasty treat with all your fave toppings ~ that's where I get myself into trouble...but who's counting calories on Friday?? Not me :-) 

1 (heaping) cup frozen chopped banana
1 tbsp all natural peanut butter (I used crunchy. Any nut butter would do)

Add the bananas and peanut butter to your food processor. I don't have an operating food processor at the moment, so I used my new blender. It worked ok, but a food processor is much better. Stop every 20 - 30 seconds to scrape the bits of banana down from the sides. Process until the banana becomes a smooth consistency; just like soft serve ice cream. It will take a few minutes.



Transfer your peanut butter banana soft serve to your most favourite bowl. Dress it up with your all-time favourite toppings. I used dark chocolate chunks and coconut.



...and sprinkles :-)

HEAVEN. ON. EARTH.
Seriously.

This did not last long and I did not share a single bite.
