Check out these little cuties. I got a great deal a couple of days ago on a bag of mini sweet peppers. Derek doesn't like "red" peppers (I haven't bothered to mention that yellow and orange peppers taste awfully similar), so I thought since he was away, it was the perfect opportunity to get my "pepper fix".So what would be more fabulous than some delicious veggie fajitas! They're quick, they're easy and they're versatile. If you're a meat eater, or you're like me and you live with a meat-eater, this recipe can easily be adjusted to make the meat-eaters happy by adding chicken, beef or shrimp. But for today, we are all about the vegetables!!
Veggie Fajitas
1 tbsp olive oil
2 cloves garlic, minced
1 - 1 1/2 c peppers, sliced into strips
1 yellow onion, sliced
1 - 1/2 c mushrooms, sliced (I used portobello and white mushrooms)
1/4 tsp cumin
1/4 tsp chili powder
2 pinches of salt, to taste
3 large soft tortillas (I used brown rice tortillas, but your fave tortilla would work)
Prepare your veggies.

Heat oil in a large saucepan or wok. Add onions and garlic. Cook for 2 minutes and add a pinch of salt (approx 1/4 tsp). Continue cooking for another 2 minutes and then add peppers and mushrooms.
Add the cumin, chili powder and another pinch of salt and cook for 5 minutes.
While the veggies are cooking, get your fixin's ready. I chopped up some lettuce, tomatoes and mashed half an avocado with lemon juice and spicy Mrs. Dash. Other options might be cheese or sour cream.
Fix your fajitas just the way you like them and enjoy!!
This dinner takes about 20 minutes to put together. It is so tasty and can be a great meal the entire family will enjoy. As a side you could add a healthy lettuce salad or how about some spanish rice & beans??
