What I Ate Wednesday & Fitness Fanatic!

Hiya! Happy Wednesday. Can you believe this is the last Wednesday of July 2012??? I know I'm probably sounding repetitive here, but where in the heck has this year gone?!?! I've seen a few comments out there from people who are already looking forward to the comfort foods of Fall for goodness sake --- hey man, I love me some comfort food, but I still have an entire garden of veggies to enjoy, so for now I`m sticking to salads, stirfries and lots of fresh, delicious summery food!







On Monday, I started Week #4 of Jamie Eason's LiveFit Trainer and I continue to feel great! I've been sticking to my clean eats and following the workout plan and things are going really, really well! Check out what I've been munching on this week:

Breakfast
I continue to flip flop between protein pancakes and veggie/egg white scrambles. They're quick and easy and oh so tasty.


Lunch
If you follow me on Twitter or Instagram, you already will have seen a glimpse of this awesome lunch! On Monday, I made up some Salad in a Jar combos. These ones had a Mexi-theme (black beans. brown rice, sweet potato, green onion, orange peppers, tomato, shredded cheddar and mixed greens). Instead of using a fat-laden salad dressing, I mashed up half an avocado with sugar-free salsa. This was the freakin' bomb-digity of salads my friends!!!!

Snacks
One thing I've found myself craving this week is something sweet. Last night I whipped a batch of raspberry lemon popsicles. Mmmmmm.....


Dinner
Oh baby, Sunday night's dinner was deeelish! I had grilled 'shrooms, half a steamed sweet potato and a huge salad. I've been attempting to make a healthy recreation of one of my fave salads --- the Olive Garden salad. This was one of my best ones yet and I promise that I'll share a recipe as soon as it is perfected! This was a meal fit for a king :-)



And now we come to fitness....I'm in Week #4 of LiveFit!!! This is a huge accomplishment and I'm so proud of myself for sticking with it. Dare I say that I'm starting to get my very own set of guns???

Pow pow --- I have muscles, I really, really DO!!! hehe

This week my workout schedule's going to look a little like this:

Monday - rest
Tuesday - back/biceps
Wednesday - shoulders/abs
Thursday - chest/triceps
Friday - legs
Saturday - yoga & back/biceps
Sunday - rest

Next week, we add cardio back in (excited!!) and our workouts increase to 6 days per week. I think I'm going to get a royal butt kicking --- I'm feeling a little out of shape in terms of my cardiovasciular health, so we shall see how things go the first day where I have to add 30 minutes of moderate cardio. I'm hoping that I will start to burn more fat and that my body will start to lean out.

Happy {Short Week} What I Ate Wednesday!

Happy {short week} Wednesday! Do you all have some lovely plans for this coming Easter Weekend? Derek and I have lots of plans with friends and family and most of those plans involve EATING! For me, it's super easy to overeat on these types of weekends, but by adding more veggies to each meal, I'm planning to keep all those extra calories on the table and not in my belly :)

This month's What I Ate Wednesday focuses on adding one extra cup of veggies to your meals each day. Trust me, it's not as hard as it sounds. When I first started thinking about this post, I didn't think I'd ever be able to show you some veggie-ful ideas because I've been under the weather with a less than stellar appetite, but once I started browsing back through some of my pics from earlier this week, I realized that I still had lots and lots of veggies included in my meals! Could it be that I have become a veggie eater by habit?! I dare say that I have :)








Breakfast
My personal opinion is that this is the easiest meal to add veggies to. Just whip up a green smoothie full of spinach and celery and voila! there's your veggies. You've seen tons of green smoothies here on Vegvacious, but this week I've had absolutely no taste for one. To soothe my throat, I have been LOVING Angela's Homemade Berry Sorbet. Oh.My.Heaven. This sorbet is gooo-oooooddddddd!


Lunch
All I have to say about lunch is: Soup, lots and lots of soup.


All my soups are full of veggies. Lately, my faves have been cream of asparagus and cream of leek.


Snackage
I've seen these Snapea Crisps on other blogs and I've been dying to find some to try for myself. I found this bag at the Bulk Barn and it lasted maybe 48 hours. They are tasty and very addicting!


Apparently they are awesome as a salad topper. Mine didn't make it quite that long hehe.


Dinner
Last night was the first time I actually felt like cooking in about 10 days. I wanted to make something fabulous, low in fat and full of veggies. What I ended up with was half a steamed sweet potato and Jenn's Quinoa Veggie Fried Rice. YUMMY!


Not bad for a sick chick, huh?!

What I Ate Wednesday

Welcome to my first What I Ate Wednesday of 2012!!!



 

Like so many other people, I'm trying to get back on track with healthy eating, loads of lemon water and a regular fitness routine. What have you been doing to get back on track?

This week has included lots of veggies and leafy greens. I've also found myself using a ton of goat cheese!

So after all of the indulgences of the holidays, this is what I've been munchin' on......

Breakie
As soon as I get up in the morning, I have a warm glass of lemon water.

After the water is in, it's eatin' time ~ my fave breakie has been 1 egg scrambled with unsweetened original almond milk and loads of sundried tomatoes, baby spinach and goat cheese. I love this!


Lunch
Lots of chopped veggies (zucchini, red onion, butternut squash ,asparagus, broccoli, peppers) roasted with a splash of olive oil and balsamic vinegar and topped with GOAT CHEESE!! Leftovers are awesome in a whole wheat wrap. 


Snacks (always a MUST)
Non-fat greek yogourt - I have been in love with raspberry lately!


Flatbread 100% whole grain crackers smeared with mashed avocado and a pinch of sea salt.


This is a new snack discovery of mine.
I <3 this snack!!!!!!

Dinner
A classic fave from my childhood. Tomato soup and a grilled cheese with tomato sammie. I've been fighting a cold and comfort food is what I'm craving. It totally hit the spot.
