What I Ate Wednesday

I just can't help myself. So many of my blogging buddies are doing WIAW that I just had to jump on the train. I enjoy getting a peek into my friends' daily eats and so I hope you enjoy having a peek into mine.


I started my day off with my usual warm water with fresh squeezed lemon and cayenne pepper.

I didn't have time for breakfast at home, so I ran out the door on an empty stomach. On the way to work we splurged and stopped for our favourite Timmy's. I had a large coffee with one milk. I have cut back significantly on the caffeine, however I can't resist a Tim Horton's coffee every once in a while.


Once I got to work, I got my "shake" on. I had very little time for packing a breakfast, so I made myself a Vega Vanilla Almondilla Shake & Go smoothie. This is a great breakfast alternative because it packs a huge punch with 2 servings of veggies, 11g of protein and only 100 calories....plus it tastes pretty darn good! Once I got to work I added a ton of ice because I love drinking these when they are ice cold.


For lunch I used the leftovers from last night's tostadas and made myself a veggie wrap layering refried beans, veggies and shredded cheese in a whole wheat tortilla. My lunch was 'da bomb!! It was so good; I hated to take the last bite because I wanted it to last forever....does that ever happen to you??


For dinner I was feeling really lazy, so I made myself a toasted tomato sandwich on whole grain sprouted bread. I don't do fancy when it comes to a toasted tomato; all you need is delicious whole grain bread, Earth Balance, some fresh tomatoes and a pinch of sea salt ~ MUAH! Absolutely mouth-watering.


.... and now for the grand finale. We rarely ever have dessert in our house because Derek would rather have a Joe Louis (bleh!) than some homemade sweet. Unfortunately, that means I can eat the entire pan myself. Today I was feeling like I needed something a little special to treat my sleepy self, so I set to work to make some banana soft serve. Oh yea baby ~ I'm talking about creamy blended bananas that tastes and looks just like soft serve ice cream with a hint of banana. Trust me, it's even better than it sounds.

All you do is cut a couple of bananas into chunks and freeze them. Once frozen, put them in a blender or food processor and blend until the mixture resembles soft serve ice cream. You might have to stop processing the bananas to push the bits down from the sides a few times. It may take several minutes to get it to the right consistency. In my opnion, a food processor works best, however I used my brand new blender today and it worked fine, you just have to stop the blender several times and push the banana back down into the bottom. Once it is well blended and the consistency of soft serve ice cream transfer it to your bowl and enjoy. Easy, right?!

I got a little creative and decided to layer my soft serve with some berries, granola and unsweetened coconut. Wow! It was amazing and I felt like I was eating something truly decadent.

  2. I always hate when I finish good meals! I just said today when I was eating my bowl of pasta for lunch, "I'm sad because this is almost gone." LOL! :-)

  3. Banana soft serve, that looks so awesome! It would be super good for breakfast. I almost always have banana in the freezer for smoothies.

    Sometimes I start to 'panic' when I get to the last few bites of a really good meal :)
